A story born on the banks of the river
The Saint-Laurent Distillery was born in Quebec, in a territory marked by the river, the climate and the seasons.
Here, spirits are not thought of as mere products, but as a reflection of a place, an environment and a state of mind.
Behind the wise descriptions and well-ordered speeches, there is above all a story of passion, intuition and obstinacy.
A story that began far from conventions, and that was built over time.
The origins
From Rimouski to Quebec
The adventure of the Saint-Laurent Distillery began in Rimouski, at the entrance to the Gaspé Peninsula.
It was there, in a strong and sometimes harsh maritime environment, that the first trials, the first recipes and the first convictions were born.
Very early on, the idea was clear: to create distinctive spirits, inspired by the local terroir, without seeking to reproduce what was being done elsewhere.
The first spirits were aged by the sea, along the St. Lawrence River, in contact with the salty air, winds and climatic variations.
A natural evolution
Distillation in Quebec
Today, production takes place in Quebec City, at the Arsenal & Co distillery, which ensures the distillation and aging of spirits in facilities adapted and designed for the long term.
This evolution happened naturally, in a logic of continuity.
The recipes, the spirit and the requirements have remained the same, while allowing us to go further in mastering the processes and in developing the product ranges.
All the spirits presented here are distilled and aged in Quebec, in this unique setting, between artisanal tradition and modern vision.
Climate as an ally
Aging at Canada's pace
Some of the spirits, including whiskies, acerum and aged gin, are now aged outdoors on the roof of the distillery.
Exposed to the extreme variations of the Canadian climate, these spirits undergo significant temperature differences, ranging from -30°C in winter to over 30°C in summer.
Some rums also follow this aging method and will be offered soon.
Spirits rooted in the land
A strong and assertive identity
Harsh winters, the river wind, the forests, the grain fields, the maple tree, the nearby sea.
The spirits from the Distillerie du Saint-Laurent reflect their region, its climate and its traditions.
To this core identity are added a creative approach, a desire for innovation and a certain freedom of tone.
Each bottle tells a little story about this territory, with sincerity.
