The scent of damp earth, moss, spring buds, or the fragrances of young conifer shoots and old pines that tickle your nostrils during your walk. It's these precious moments of connection with nature that we wanted to evoke with the creation of this new gin, a tribute to the coastal forest of Bic National Park and the Lower St. Lawrence region.
Cold distillation? Vacuum still?
This is science, not fiction! In a traditional still, alcohol evaporates at 78°C, which "cooks" and denatures delicate aromatics such as citrus fruits and herbs. Using a vacuum still completely changes the game. By removing the air from the still with a pump, the pressure is drastically reduced, allowing the alcohol to evaporate at only 30°C. The result? Fir essential oils are distilled without alteration.
