Gin Boréa - Distillerie Saint-Laurent

Boréa Gin - St-Laurent Distillery

Have you ever explored the forests of Bic National Park just after the rain? The scent of damp earth, moss, spring buds, or the fragrances of young conifer shoots and old pines that tickle your nostrils during your walk. It's these precious moments of connection with nature that we wanted to evoke with the creation of this new gin, a tribute to the coastal forest of Bic National Park and the Lower St. Lawrence region.

Cold distillation? Vacuum still?

This is science, not fiction! In a traditional still, alcohol evaporates at 78°C, which "cooks" and denatures delicate aromatics such as citrus fruits and herbs. Using a vacuum still completely changes the game. By removing the air from the still with a pump, the pressure is drastically reduced, allowing the alcohol to evaporate at only 30°C. The result? Fir essential oils are distilled without alteration.

Herbs

Juniper, balsam fir shoot, red pine bark, yellow birch twig, bearded usnea and dune pepper.

Tasting notes

Cold vacuum distillation of balsam fir, an iconic species of the boreal forest, imparts unexpected tropical notes of grapefruit. Red pine bark, yellow birch twigs, dune pepper, and bearded usnea evoke memories of walks in the undergrowth.
