Citrus Gin represents the culmination of this wild experimentation! Inspired by their discoveries on the coasts of Japan and Vietnam, the artisans at Distillerie du Saint-Laurent present a citrus gin cold-distilled in an experimental vacuum still. The aromas of the world's finest ingredients, distilled under vacuum with expertise and passion in Rimouski.

Cold distillation? Vacuum still?

This is science, not fiction! In a traditional still, alcohol evaporates at 78°C, which "cooks" and alters delicate botanicals such as citrus fruits and herbs. Using a vacuum still completely changes the game. By removing the air from the still with a pump, the pressure is drastically reduced, allowing the alcohol to evaporate at just 30°C—the ambient temperature at which the citrus fruits used in St. Laurent Gin Citrus are harvested. The result? The essential oils of citrus fruits and herbs are distilled without alteration.
