Old Gin - St-Laurent Distillery
Each month, a tiny portion of our Maritime Gin production is transferred to old Saint-Laurent whisky barrels. After resting for over a year in oak casks, our renowned seaweed-infused gin becomes Gin Vieux.
The characteristic aromas of St. Laurent Gin are rediscovered in a whole new light: herbaceous and floral notes intertwine with piney aromas reminiscent of Quebec's boreal forest. Rather subtle in the original version, the citrus notes explode on the palate. The finish remains true to the signature of this Maritime Gin: a touch of sea and iodine from the maceration of kombu seaweed harvested from the St. Lawrence River. Time then leaves its mark: cereal and woody notes imparted by aging in whisky barrels enrich the liquid's aromatic complexity. In short, this Old Gin is a great sipping gin that only occasionally accepts a few ice cubes as its sole companion.
