Acerum - St-Laurent Distillery

Acerum Saint-Laurent is a fine brandy that reveals the delicate and refined aromas of distilled maple sap. The only ingredients used for fermentation are Quebec maple syrup, water, and yeast. The maple must is then distilled twice in a Scottish-style copper pot still. No sweeteners or flavorings are added to the precious distillate. Acerum is then aged in new and used oak barrels for a minimum of three years.

More than 25 liters of maple sap are needed to produce a single bottle. One of the most laborious spirits to distill, Acerum is an innovation that pays homage to our ancestral sugar shack traditions.

We are proud to be among the pioneers of maple syrup distillation and to be part of the initiators of the protected designation of origin Acerum. The Protected Geographical Indication (PGI) certification was obtained in 2025.

Tasting notes

Time has worked its magic: an even more refined, complex, and luscious spirit, thanks to a better balance between the aromas of the syrup and those imparted by the wood. It is delicate and indulgent, without being overly sweet. A light and fruity approach, with aromas of candied apple and pear, and notes of coconut husk.
