Acerum - St-Laurent Distillery
Acerum Saint-Laurent is a fine brandy that reveals the delicate and refined aromas of distilled maple sap. The only ingredients used for fermentation are Quebec maple syrup, water, and yeast. The maple must is then distilled twice in a Scottish-style copper pot still. No sweeteners or flavorings are added to the precious distillate. Acerum is then aged in new and used oak barrels for a minimum of three years.
More than 25 liters of maple sap are needed to produce a single bottle. One of the most laborious spirits to distill, Acerum is an innovation that pays homage to our ancestral sugar shack traditions.
